Utah was awesome! I will be posting pics in the next couple days, but I have not loaded them onto my computer yet.
Yesterday was Ash Wednesday, the first day of Lent...this year I've decided to give up sweets and go vegan. I have been kind of toying with the idea of being vegan for a long time. The more I read about it, the more I think it is a good idea. The science behind it makes sense: it is better for me, it is better for the environment, and it is better for the animals.
It is not better for Mic, but he is traveling pretty much for all of Lent, so it probably will not be that big of a deal...or at least that is what I thought.
There is a deli here in GR called 4th Street Deli that has over 100 kinds of sandwiches and every single one that I have tried is AWESOME! My favorite is curry tofu on a pretzel roll. They make this awesome curry tofu salad with veggies and mayo (so, not vegan) and curry powder, then it is topped with greens and an orange teriyaki mayo!
Since this one is not vegan, I've been making my own version. I meant to show you pictures, but I ate it before I took any. I guess I was really hungry when I got home from work and class. I make it with tofu, vegenaise, some chopped broccoli, green onions, curry powder, and some other spices. I put it on greens and top it with Dreena Burton's Sesame Mustard Tahini Sauce for the dressing. The recipe is in her book Vive Le Vegan! I could eat this sauce like a soup! I love it! And it is super easy to make! You just throw everything in a blender and serve.
Anyway, now for the good part of the story...The curry tofu salad was sitting in a tupperware container in our fridge tonight when Mic got home. He had been gone for the last couple days. While he was gone, I went to the health food store and stocked up on vegan cheese, tofutti cream cheese, tofu, etc. He is not happy about the lack of animal milk, cheese, meat, etc. in our fridge.
I was sitting in class and I got this email..."I tried the broccoli thing you had in the fridge. Hopefully I was supposed to heat it up because I did."
Ummm...GROSS! First of all...this salad would not be good warmed up..at. all. At least, I do not think it would be. I'm not sure what it tasted like, but apparently it was not good, because he ate one bite and then put it back and now refuses to eat tofu. Second...I love how he calls it "the broccoli thing", it is yellow and looks kind of like egg salad and just has little bitty pieces of broccoli in it.
Anyway...I hope you are looking forward to K.Mo and M.Stine's current events as much as I am. I also can't wait to tell you all about our Utah trip!

Well this is just hilarious! I wish I could have seen the look on his face when he took a big bite of the tofu. It sounds delicious though and I want to try it. I also want to try 4th St. Deli sometime when I come home!
